SMOKED MACKEREL TACOS WITH CRUNCHY VEGETABLES

INGREDIENTS:

MACKEREL FILLLING

4 smoked mackerel fillets
1 medium ripe avocado peeled and finely chopped
1 red onion, finely diced
Juice and zest of one lime
Juice and zest of ½ lemon
1 red chilli deseeded and finely chopped
4 tbsp Yogiyo Sweet & Tasty Chilli Sauce
1 tbsp coriander, finely chopped
Salt & pepper to taste

CRUNCH ASIAN VEG

8 radishes, thinly sliced
2 carrots coarsely grated
4 spring onions finely sliced
100g beansprouts
2 tbsp toasted sesame oil
Salt & pepper

TO SERVE

100g crème fraiche
Coriander leaves
Soft corn tacos

METHOD:

1. Mix all the mackerel filling ingredients together in a bowl and season with salt and pepper.


2. Mix the crunchy Asian vegetable ingredients together, dress with toasted sesame oil and season with salt and pepper.


3. Heat the tacos in a dry pan or under a hot grill until warm and fill with Asian vegetables and smoked mackerel filling, top with crème fraiche and coriander.
